Veg Khichdi
A simple, one-pot comfort meal that is easy to digest and budget-friendly.

Ingredients:
- ½ cup rice
- ¼ cup moong dal
- 1 small onion (chopped)
- 1 tomato (chopped)
- 1 carrot (chopped)
- 1 potato (chopped)
- ½ cup Green Peas
- any favourite veggies
- ½ tsp turmeric
- 1 tsp ghee (or oil)
- ½ tsp cumin seeds
- 1 green chilli(depends on spice levels)
- Salt to taste
- 3 cups Water
Instructions:
- Wash rice & dal, and soak for 30 min.
- cook with 3 cups of water, turmeric, and salt.
- In a pan, heat ghee, add cumin seeds and saute them.
- Add onion, tomato, carrot, potato, Green Peas , favourite veggies and green chilli.
- Now add the Dal Rice into the veggies.
